Mailanderli are a traditional lemon butter Swiss Christmas Cookie that I have known, loved and made my whole life. They are THE most made Christmas cookie in Switzerland. My heritage being Swiss, growing up, making these with my Mom in December was the first sign of the upcoming holidays! The fun is in the rolling out the dough and pressing out the traditional shapes. I become very nostalgic when I see the cookie cutters every year as they are like seeing old friends. The recipe is easy and foolproof and delicious and is a wonderful accompaniment, evoking many wonderful memories, to have with a hot cup of tea, coffee or hot chocolate!

Read MoreI love this recipe! It’s one that I have used at workshops for a couple of years now, and a recipe I make and share with friends, to demonstrate how you can pack a lot of plant-based nutrition into your meal, how balanced it is with protein, carbs and healthy fat, how quick and easy it is to make, and to turn those who don’t like quinoa into liking quinoa! Really, it truly is delicious and nutrition packed, gluten and dairy free, a one-pan recipe that is quick and easy to make. I like mine without, so it’s a mocktail! I keep a pitcher in the fridge and it’s such a welcome drink – tastes like a decadent treat when it’s really low calorie and the ingredients pack such powerful nutritional goodness so healthy for us! Make up a pitcher and enjoy!
Read MoreThis is a wonderful recipe and since having developed it, it has become one of our family’s favorite. The spice mix with the lime zest and the splash of lime juice on the chicken gives the chicken a certain very special something! Trust me when I say you must make this recipe and it will become a favourite in your home too. I roasted sweet potatoes, beets and then added corn in to roast after a few minutes as well to keep it tender and moist – the corn can go in with the sweet potatoes and beets if you want the corn really roasted. This combination is rather unconventional and works really well. The colour on your plate is beautiful and the nutrition you will consume is wonderful and so healthful!
