Refreshing Watermelon Strawberry Cooler
I’ve seen so many recipes for watermelon strawberry beverages this summer. I guess I’ve been ahead of this trend curve as I have made this drink for many summers.
Watermelon has many health benefits other than being a great way to hydrate. Watermelons have the highest amount of lycopene, an antioxidant, more than any other fruit or vegetable – including tomatoes – that studies have shown to lower the risk of cancer. Watermelon has a low glycemic index so it supports blood sugar levels and together with citrulline supports heart health. It is an anti-inflammatory with a benefit of supporting joints from arthritis. Just one slice of watermelon provides a rich amount of VitA which is so beneficial for eye health. The potassium in watermelon makes it a great thing to eat or drink post-workout to keep the muscles from cramping.
Strawberries have a high level of antioxidants called polyphenols, which is a micronutrient found in plants. They are rich in fiber, are sodium free, fat free, cholesterol free, low calorie and are a good source of potassium and manganese.
Basil is a wonderful healthful herb containing the antioxidants lutein, zeaxanthin, and beta-carotene – so beneficial to support eye health, blood sugar regulation and heart health. It can reduce anxiety and depression and helps support improved cognition.
It’s a delicious refreshing slushy drink that is wonderful on its own or, if you are so inclined, add a shot of gin or a splash of coconut rum to turn it into a cocktail. I like mine without, so it’s a mocktail! I keep a pitcher in the fridge and it’s such a welcome drink with some additional crushed ice – tastes like a decadent treat when it’s really low calorie and so good for us!

Ingredients
2 Cups Seedless Watermelon - cubed
6 Strawberries – washed and hulled and cut in half
7 Fresh Basil Leaves
2 teaspoons Lemon Juice
2 Cups Coconut Water
2 teaspoons Maple Syrup
2 Cups Ice
How It’s Made
Combine all ingredients in a blender and whirl until smooth. It comes together quickly. It’s slushy when first served and then the crushed ice melts and you have a lovely smooth beverage.
Keep leftovers in the fridge – give it a stir before pouring.
