N'ice Cream
As promised, here is my vegan, no-ice-cream-machine-required, no churn, no banana, N’ice Cream recipe!
It’s super easy to make, only 5 ingredients, and is such a delicious treat for dessert! You need to plan this a day or two ahead to allow for the freezing time. This n’ice cream is sweetened with a bit of maple syrup. And the cocoa provides a healthy boost of powerful anti-inflammatory and antioxidants, calcium, zinc, copper and potassium and magnesium. . These minerals and vitamins help to boost memory, clarity and immunity. A sweet treat with wonderful benefits!

Prep Time: 5 minutes / Freezing time: 3-6 hours / Makes: 2+cups
Ingredients
1 14oz/400ml Can Full Fat Coconut Milk
1/3 Cup Maple Syrup
2 Tablespoons Cocoa Powder
2 teaspoons Vanilla Extract
½ Cup Unsweetened Almond Milk
How It’s Made
Prep silicon muffin liners in a muffin tin. The silicone liners allow you to pop the frozen cups out easily and you need them in smaller frozen sizes to blend easier.
In a medium sized bowl, or a measuring cup works great for pouring, add the coconut milk, maple syrup, cocoa powder and vanilla extract and whisk until blended and smooth.
Pour into silicone muffin liners. Place the pan in the freezer for a minimum of 3 hours or overnight. The cups need to be solidly frozen.
When ready to make the n’ice cream, remove the pan from the freezer and pop out the frozen cups into a blender.
Add in the almond milk.
Whirl, stopping occasionally to scrape down the mixture to have frozen pieces pushed close to the bottom to the blades, so it all blends nicely.
Blend until you have a smooth consistency. It will be like soft-serve ice cream at this point. You can serve it like this but if you want it more scoopable, transfer the n’ice cream to a bowl or container safe for the freezer and let it freeze for another couple of hours or overnight again.
To serve, remove from the freezer and, if it’s frozen solid, let it sit at room temperature for 3-5 minutes. Scoop into cones or into pretty bowls and serve!
