Lemon Honey Dijon Dressing
Wanted to share with you one of my favourite summer salad dressings – or for any time of year really. It’s very flavourful and all you really need are some spring greens, one or two salad veggies cup up and I LOVE this with fresh blueberries. I have a jar of this in the fridge ready to go so a salad can be a side dish for dinner or a quick lunch in a flash!
Meal Prep Alert: Make extra chicken, or salmon for dinner another night and add when building your salad using this lovely dressing. Vegetarian option would be to add some chickpeas of other beans for the protein or some tempeh pan sautéed tempeh cubes. A quick, light, delicious, nutrition balanced and complete lunch or dinner with good protein, healthy fat and carbs! Mmmmmmm!
The blueberries are packed with antioxidants and nutrients and they add a sweet and delicious flavour to compliment the flavours of the salad dressing. Blueberries contain VitC, VitB6, folate, potassium, and the phytonutrient content supports heart health. Blueberries also support brain health, mental health and strengthen against cognitive decline. Studies have shown that berries in general “can prevent age-related neurodegenerative diseases and improve motor and cognitive functions.”

Prep Time: 10 minutes / Cook time: No cook time / Makes: 2/3+ Cup
Ingredients
2 Cloves Garlic - Minced
1/2 Cup Extra Virgin Olive Oil (or Grape Seed Oil for a milder flavour)
1/3 Cup Fresh Lemon Juice
2 Tablespoons Honey
1 Tablespoon Finely Chopped Onion
3 teaspoons Dijon Mustard
1/4 teaspoon Herbamare (or Sea Salt)
Grinds of Fresh Black Pepper
How It’s Made
Mince your garlic and set aside. Add it last, after all the other ingredients, to give it time so it can create its nutritional magic!
Use a good quality fresh olive oil. A heavy olive oil will overwhelm the salad dressing flavour. Mix all ingredients in a jar. Securely tighten the lid and shake shake shake until the ingredients are thoroughly mixed.
Allow the ingredients to rest so the flavors come together – about 15 minutes. Shake again and with a clean spoon taste the dressing. Adjust the flavour to your taste – a little more Dijon? A little more honey? A bit more lemon juice? Adjust seasoning of Herbamare (or sea salt) and a n extra grind of pepper.
Serve over some beautiful greens, baby cucumber slices, any other salad veggies you like and blueberries, definitely blueberries!
Store for a week or two in the refrigerator. Give the jar a good shake before you use it to blend all the ingredients and flavours together again.
