Almond Flour 90 Second Bun

There are almond flour bun recipes going around social media these days so I had to try to create one of my own. This is a great bun! My version of the recipe is good for either a breakfast bun or a savory bun – it all depends on the seasonings you add to the batter.

2 Hour Artisan Bread

Homemade bread is healthier as it doesn’t have the preservatives that commercial breads do and it saves you money making this bread yourself vs buying an artisan style loaf at the store.

If you are new to bread making, this is a great intro bread to start you off. It’s delicious! And quick! And there is no kneading required, just easy shaping (what this means is in the directions). You’ll be a artisan bread maker in no time!

Hazelnut Chocolate Chip Oat Squares (GF/DF)

I was inspired to make these squares as I had a jar of delicious hazelnut butter in the cupboard and thought it would be a nice change from peanut butter in baking. It looks like a lot of ingredients but it comes together quickly and the results are delicious. Don’t be tempted to bake them until they are really browned – they will be too crumbly that way. Enjoy these for breakfast, a energy boost snack or for dessert.

Cashew Milk -(Plain and Chocolate)

Making your own plant-based milk with cashews is so easy. The cashews are soft and blend smoothly so there is no need to have to strain the pulp out as you have to do with other nut milks. Cashews are rich in fiber, iron, high in magnesium and the unsaturated fat in cashews is predominantly a healthy oleic acid (the same as in olive oil). Plain cashew milk is delicious to use in coffee or tea, over cereal, in baking, or to drink on its own. Adding cocoa makes chocolate cashew milk which is heavenly!

Saskatoon Berry Pancakes

Saskatoon Berries are a superfood, packed with antioxidants and high in plant-based fiber, they look like blueberries and have a similar taste but they are not related. Saskatoon berries are more in the apple family – interesting! They have 7x the amount of calcium and twice the amount of manganese of blueberries. They are SO delicious!

Quick and Easy Homemade Bagels

This recipe for fast and appetizing baking powder bagels uses either wheat or gluten free flour and has 5 simple ingredients – 6 if you add sesame seeds sprinkled on top before baking. My recipe uses dairy-based Greek yogurt which is higher in protein than regular yogurt, is a good source of calcium, vitamin B2 and B12, selenium as well as vitamin A, zinc and potassium. Plain Greek yogurt is low in carbs and has little sugar. The flavoured varieties have more sugar so eat those in moderation. These heavenly rings are delicious hot from the oven or next day plain or toasted. So. Very. Good.

How quick and easy these sheet pan pancakes are to make, and one bowl makes cleanup easy too.  These pancakes bake in 15 minutes so you can have breakfast ready quickly. Plus, this dish saves standing by the stove to flip individual pancakes (I do love me some stacked pancakes too thought!). Customize these sheet pan pancakes however you like – berries in one area, chocolate chips in another, almond butter and banana in another and pumpkin seeds, sunflower seeds and coconut in another – as in the photos.   What would you choose?  What are your family’s favourites? Serve with a drizzle of maple syrup - delish!
