Tamarack Banana Chocolate Chip Muffins

When our boys were younger, and we lived on Tamarack Drive, these muffins were on the baking rotation weekly. They are a FAVOURITE for our family and for the three young men named above too! I could not count how many times I have baked these and the purposes they served - baked and iced for school bake sale fundraisers, given as “Get Well” treats, packed in school lunches, picnics, breakfasts on-the-go, a healthy snack before hockey or baseball (with cut up apple!), made when last-minute company was on their way…

So easy to prepare and they bake in 17 minutes. They are best same day fresh and are quickly brought to that same freshness when placed in a 350-degree oven for 5-7 minutes or microwaved for 10 seconds when a couple of days old.

Tamarack (Best Ever) Banana Chocolate Chip Muffins

Prep Time: 5 minutes Bake Time: 17 Minutes Total: 22 Minutes Serves: 12 muffins

Ingredients:

  • 3 large bananas - ripe or frozen or a combination work well

  • ½ cup white sugar

  • ¼ cup brown sugar

  • 1 egg

  • 1/3 cup melted butter

  • 1¼ cup unbleached white flour

  • 1/3 cup natural bran

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • ½ teaspoon salt (optional)

  • ½ - ¾ cup semi-sweet chocolate chips

How It’s Made:

  • Preheat your oven to 375°F.

  • Put paper liners in your muffin tin.

  • Melt the butter.

  • In a large bowl, mash bananas. Add the sugars and the egg and mix together well.

  • Add the melted butter and stir to combine.

  • Add the flour, bran, baking powder, baking soda and salt (if using) and stir to combine.

  • Gently stir in the chocolate chips.

  • Spoon the batter into the muffin cups to ¾ full.

  • Bake for 17 minutes and remove from the oven.

Variations:

  • Add frosting or icing to make them into cupcakes.

  • Add other types of chips – butterscotch or white or both.
