Sourdough Starter Waffles
Did you try sourdough breadmaking during 2020? Are you nurturing sourdough starter in your kitchen, and, like me, like to find ways to use the discard? Then give these waffles a try! Waffle irons are readily available and trend on and off. I have two hand me down waffle irons - each more than 25 years old and they still work great.

Ingredients:
1½ cups All-Purpose Flour
2 Tablespoons Brown Cane Sugar
1 teaspoon Sea Salt
¼ teaspoon Baking Powder
¼ teaspoon Baking Soda
1 cup Sourdough Starter
1 cup Soured Milk
½ cup Butter - melted
2 Eggs
1 teaspoon Vanilla
How It’s Made
Make the soured milk – put 2 Tablespoons of white vinegar in a measuring cup. Fill with milk to the cup mark. Let it sit to curdle and sour for 5 minutes or so.
Preheat your waffle iron to get it nice and hot.
Mix the flour, sugar, salt, baking powder and baking soda in a large bowl.
Add in the sourdough starter, soured milk, melted butter and the eggs and mix until you have a nice smooth batter.
Preheat your waffle iron to get it nice and hot. I oil mine by dropping a few dropped onto the bottom grill and using a pastry brush to brush it all over – top and bottom.
Pour enough batter onto the waffle iron to cover most of the grill but not to the edge as the batter will spread when you close the lid.
Let the waffle cook for 3-5 minutes, until they are golden brown.
Carefully remove the cooked waffle from the iron onto a plate and start your next one.
Serve your sourdough waffles with butter and your favourite syrup or fruit.

Variations:
Add 1 Tablespoon cocoa to the dry ingredients for a chocolate waffle.
Add 2 teaspoons cinnamon to the dry ingredients
Use Buttermilk instead of the soured milk.
