Greek Salad a la Dwight

My husband Dwight makes the BEST Greek Salad! It is so fresh and refreshing, light and delicious and a welcome change to the mixed green, spinach, romaine or kale salads I make. It is perfect year-round! We have it for lunch with my Cornmeal Drop Biscuits or as a veggie side at dinner. You don’t need any salt for seasoning as the green olives and feta are plenty salty!

Prep Time: 5 minutes Bake Time: none Total: 5 Minutes Serves: 2 generous portions

Ingredients

  • ½ cup Cherry or Grape Tomatoes

  • ½ cup Stuffed Green Olives (Stuffed Queens if you can find them!) – drained

  • 1 cup English Cucumber – sliced in ½ inch pieces and quartered

  • ½ cup Feta Cheese – crumbled

  • A nice grinding of black Pepper

  • 1/4 cup Olive Oil

How It’s Made

  • Mix all the ingredients together in a bowl.
