Greek Inspired Turkey Burgers

Summertime = fast fun healthy food. And burgers always fit the bill. These burgers are inspired by the super healthy Greek spice oregano, garlic and onions, topped with tzatziki (not dairy free), tomato and sliced green olives. My recipe includes a trick to make these burgers extra yummy – see recipe! These burgers are also delicious topped with hummus and sprinkled with some nutritional yeast in place of the tzatziki – so YUM – and then they are dairy free (they do contain an egg)!

Freezing Ginger

Freezing ginger! I keep fresh ginger in my fridge for when a recipe calls for fresh ginger slices. But mostly, I use frozen ginger. I freeze whole ginger and when I need ginger grated in a recipe, I simply take it out, grate it and then put the remaining piece of ginger back in the freezer. Super handy, super quick, super easy and super nutritious!

Lime Spice Chicken with Sweet Potatoes, Beets and Corn

This is a wonderful recipe and since having developed it, it has become one of our family’s favorite. The spice mix with the lime zest and the splash of lime juice on the chicken gives the chicken a certain very special something! I roasted sweet potatoes, beets and then added corn in to roast after a few minutes as well to keep it tender and moist – the corn can go in with the sweet potatoes and beets if you want the corn really roasted. Hoisin Chili Glazed Chicken

This is an easy and versatile chicken recipe as you can make it to bake in the oven or to cook on the BBQ. I make my own Hoisin sauce but you can use a store-bought version as well. Making your own sauces is always preferable as you can use the best ingredients, no preservatives and control the amount of sweetness and salt. Using store-bought sauces are fine, just don’t add additional salt to the recipe!
