Homemade Tzatziki Sauce
As you know I like to make my own sauces and condiments rather than buying store bought ones. Here is my tzatziki recipe! Super simple and delicious and so fresh! Other tzatziki recipes add dill to the mixture – my version does not – I love dill so I sprinkle dill on the tzatziki on the burger as I find the flavour of dill comes through stronger that way. Feel free to include dill right into the mixture if your heart desires.
Tzatziki sauce can be used on burgers, in a wrap with veggies and a protein like tamari sautéed tempeh, sliced cooked chicken or a sliced hard-boiled egg. It can be used as a salad dressing – you will want to thin it out a bit with a splash of olive oil, or eaten as a dip with crackers and cut up veggies!

Prep Time: 10 minutes / Cook time: No cook time / Makes: 1½ Cups
Ingredients:
1 Clove Garlic – minced
1 Tablespoon Olive Oil
1 Cup Greek Yogurt
½ English Cucumber – diced small (you can use a regular cucumber but peel and deseed it first)
1½ Tablespoons Lemon Juice
1/4 tsp Lemon Zest
1 teaspoon Dried Parsley
½ teaspoon Dill – option (I sprinkle it on top of the tzatziki on the burger)
Herbamare (or sea salt) and Freshly Ground Black Pepper – to taste
How It’s Made:
Mince your garlic and let it sit in the olive oil as you gather the rest of your ingredients. This allows the active ingredients in the garlic to work their nutritional magic!
In a medium bowl, mix the yogurt, cucumber, lemon juice and zest together. Add in the garlic and olive oil and give the mixture a good stir.
Add the parsley, the dill (if adding it here), a pinch of Herbamare (or sea salt) and a few grinds of black pepper. Stir again.
