Cocoa Fudge Bliss Bites

It’s time for another Bliss Bite recipe! This time with chocolate and filled with healthy ingredients!

I drizzled some of my Tahini Maple Syrup Caramel over these and it made them next level – that caramel sauce does that every time and to everything it is used in or used on! Make a batch of these Bites to share with someone special!

Walnuts are a good food for brain health as they are a rich source of polyunsaturated fats and have a high amount of omega-3 fatty acids. They are an antioxidant for general health and wellness and are good source of protein.

Prep Time: 15 minutes / Cook time: No cook time / Makes: 15 -18 Bliss Bites

Ingredients:

  • 1 Cup Walnuts

  • ½ Cup Pecans or ground almonds or pumpkin seeds

  • 1½ Tablespoons Tahini

  • 1 Cup Coconut Flakes – Unsweetened

  • 14 Medjool Dates – softened in hot water

  • ½ Cup Cocoa Powder

  • ½ Cup Brown Rice Flour

  • ½ Teaspoon Ground Cinnamon

  • 1 Tablespoon Hemp Hearts

  • 1/3 Cup Almond Milk

  • 1 teaspoon Vanilla

  • 2 Tablespoons Maple Syrup – alternate: coconut sugar

  • 1/8 teaspoon Sea Salt

How It’s Made

  • Check your dates to see if they are soft. If they aren’t, cover them in hot water and let them soak for 15 minutes then drain them well. To speed this time up, in a microwave safe bowl, cover the dates with hot water and microwave them for 2 minutes. Drain well.

  • In your food processor, add the walnuts, the pecans, ground almonds or pumpkin seeds, the tahini and the coconut. Give it a while until it is mixed together.

  • Add the dates and whirl again until it forms a ball, then add the rest of the ingredients and whirl until it forms a well integrated mass. If it is too sticky, add a tablespoon at a time of additional rice flour until it is still a mass but no longer super sticky. It might even bind up and form a ball.

  • Carefully remove the blade and set aside. Scoop out a tablespoon or so of the mixture and, with clean hands, roll between your palms to form a ball. Continue making balls until no more mixture is left. Your hands will need a good wash!

  • As these balls are slightly sticky, you can roll them in some almond flour or flaked coconut, or you can, as I mostly do with these, drizzle them with Tahini Maple Syrup Caramel. Store these Bites in the fridge in a single layer. These freeze well too, plain – bring them to room temperature and then add the drizzle when you want to serve them and store them in the fridge afterwards.
