Birchermuesli

Being Swiss it doesn’t get more traditional for the first meal of the day than super healthy and delicious Birchermuesli The way I make Birchermuesli is traditional – other than I make mine dairy free with using almond milk instead of milk and cream as in the original recipes. Oats make this breakfast naturally gluten free and my version is dairy free as I use almond milk to soak the oats in. It is a great way to start the day, filled with healthy raw ingredients to keep you satisfied and fueled with energy until lunchtime. En Guete!

Roasted Mushroom Polenta

Polenta – I’m sure you are familiar with this wonderful dish made of cornmeal but perhaps have not tried to make it. I encourage you to make this recipe and it is so simple and so delicious. These burgers are also delicious topped with hummus and sprinkled with some nutritional yeast in place of the tzatziki – so YUM – and then they are dairy free (they do contain an egg)!

Freezing Ginger

Freezing ginger! I keep fresh ginger in my fridge for when a recipe calls for fresh ginger slices. But mostly, I use frozen ginger. I freeze whole ginger and when I need ginger grated in a recipe, I simply take it out, grate it and then put the remaining piece of ginger back in the freezer. Super handy, super quick, super easy and super nutritious!

Lime Spice Chicken with Sweet Potatoes, Beets and Corn

This is a wonderful recipe and since having developed it, it has become one of our family’s favorite. The spice mix with the lime zest and the splash of lime juice on the chicken gives the chicken a certain very special something! Trust me when I say you must make this recipe and it will become a favourite in your home too. I roasted sweet potatoes, beets and then added corn in to roast after a few minutes as well to keep it tender and moist – the corn can go in with the sweet potatoes and beets if you want the corn really roasted. This combination is rather unconventional and works really well. The colour on your plate is beautiful and the nutrition you will consume is wonderful and so healthful!
