Decadent 3 Ingredient Mousse au Chocolat - a perfect recipe for Valentine’s Day or a special dessert for any occasion or for no reason at all just to have a fabulous treat!
I am jumping in on the aquafaba chocolate mousse trend! There are loads of recipes out there with loads of ingredients and long instructions. I narrowed the base recipe down to 3 ingredients and a few instructions. You can add a splash of vanilla, a teaspoon of instant coffee or espresso powder, a bit of cinnamon, some white or dark chocolate bits, top with a drizzle of caramel, chocolate shavings, berries… so many delicious possibilities. As I said before, it’s a decadent treat for a special evening or to spoil someone special – like yourself! Super simple and super delicious!
I will never waste the liquid when draining a can of chickpeas ever again! That liquid is pure gold! The liquid from a can of chickpeas is called Aquafaba. Apparently, the liquid from white beans also works as aquafaba but I have not tried it yet. When I do, I will let you know. For now, it’s chickpea liquid for me, which is never a problem as I use chickpeas often. It has a thicker consistency than other bean liquid and it whips up like egg whites do. It is called the vegan egg white substitute and perfect for those with egg allergies. I want to experiment making meringues with Aquafaba. Again, when I do, I will let you know – you’ll see them here on The Renata Collective!
Some of the nutrients transfer into the water from the healthy Chickpea legumes in the can. Unfortunalty two of the main health benefits of chickpeas, protein and fiber, don’t transfer over, but the liquid still has trace amounts of other nutrients: folate, iron, B vitamins, phosphorus and the healthy fat in chickpeas, the oleic and linoleic acids.
The other two ingredients in the mousse are icing sugar and chocolate.
Dark Chocolate is an anti-oxidant and a rich source of fiber, iron, magnesium, copper and manganese and contain anandamide and theobromine which are potent neuro benefiting components that help promote an overall sense of well-being, calmness, joy and bliss – the same feelings we get when we are in love!

Prep Time: 10 minutes / Chill Time: 2 hours / Makes: 4 Servings
Ingredients
2/3 - 1 Cup Liquid from a 540mL / 19 fl. Oz Can of Chickpeas (Each can has a different amount of liquid. You will need at least 2/3 cup.)
2 Tablespoons Icing Sugar / Powdered Sugar
1 Cup Dark Chocolate Chips (Alternate: semi-sweet chocolate chips)
Options:
To Add In:
1 teaspoon Vanilla
1 Teaspoon Instant Coffee or Espresso Powder
½ teaspoon Cinnamon
2 Tablespoons small White or Dark Chocolate bits
To Garnish:
A Valentine Chocolate Heart
Cinnamon Hearts
A Drizzle of Caramel
Chocolate Shavings
Berries
How It’s Made
Melt the chocolate chips in a double boiler on the stove top stirring constantly until smooth and liquidy, or in the microwave, in 20 second intervals, stirring after each 20 seconds until the chocolate is smooth and liquidy. Set aside to cool while you do the next step.
Pour the chickpea liquid into a 4-cup measuring cup or larger, or medium tall bowl, as the mixture expands as it is whipped. I use a hand-held immersion whisk. A regular electric hand mixer works fine as well.
Whip on low for 1 minute. The liquid will start to create a foam.
Continue to whip on medium for 3-4 minutes longer. The mixture will thicken and become frothy.
Continue to whip for another 3-4 minutes. You will see soft peaks form when you stop the mixer.
Add the icing sugar and whip for another minute.
Add in the cooled (make sure it’s cooled as hot melted chocolate will completely flatten the whipped aquafaba) melted chocolate slowly while whipping on low until the chocolate is smoothly incorporated into the aquafaba. The chocolate will reduce the volume you have just whipped and that’s ok.
It is delicious as it is right now, but if you wish, add the optional ingredients you want now, whipping on low until blended smooth.
Pour into serving dishes. Place in the fridge to chill and firm up for 2 hours.
Serve plain or serve garnished.
