Quick & Easy Snickers Bark

Recipes for ‘bark’ have been trending all over Instagram and TikTok.  This is my recipe for Bark – made in 5 minutes and then popped in the freezer to harden. So easy and so good!

Dark Chocolate and semi-sweet chocolate are anti-oxidant and a good source of fiber, iron, magnesium, copper and manganese.

All-natural peanut butter is a good source of Vit E, B3 and B6, manganese, magnesium and copper which is particularly good to support immune health. The fat in peanut butter is oleic acid which supports and maintains cholesterol, blood sugar and blood pressure levels and  also supports brain health as it works to on nerve repair, myelin production and inflammation reduction.

Prep Time: 5 minutes / Set Time: 2 hours / Makes: a 10” x 10” slab – break into the size pieces you wish

Ingredients

  • 1 1/3 Cup Chocolate Chips – a combination of semi sweet and dark chips is delicious

  • 1 Tablespoon Coconut Oil

  • 3 Tablespoons All-Natural Peanut Butter

  • ½ cup whole and chopped peanuts (or chopped pecans as in some of the photos)

  • Coarse Grain Sea Salt

How It’s Made

  • Prep a flat baking pan that has sides by placing parchment on it.   

  • In a microwave safe bowl in 30 second increments, or in a small pot on low heat on the stove top, melt the chocolate and the coconut oil, stir until very smooth.

  • Pour the melted chocolate mixture onto the pan and spread it out to a 10”x10” round or square.   

  • Drop peanut butter dollops over the chocolate. Using a toothpick, a dinner knife, a small spoon or a fork, swirl the peanut butter into the chocolate. 

  • Distribute the whole and chopped peanuts over the top and sprinkle with the sea salt.

  • Put the pan in the freezer to let the bark firm harden – about 2 hours. Check to make sure the peanut butter is hard.  

  • Remove from the freezer and break into pieces.

  • Store these in the fridge in a sealed container.

Variations:

  • Swap another type of nut for the peanuts – chopped pecans, hazelnuts or sliced almonds.

  • Add crushed candy cane for a holiday flavour.

  • Add chopped cookies.

  • Use another type of nut butter (almond, cashew, hazelnut – just make sure they are runny – if not, microwave for 30 seconds – 1 minute to make it runny) and use the same nuts on top.
