Fresh Asian Inspired Cucumber Salad

A different take on a cucumber salad! It’s fresh and delicious and so easy to make! Perfect as a quick healthy side for lunch or dinner on a hot summer day or any time of year! I use an Italian cucumber so this has become an East meets West fusion salad! Serve this as a stand-alone salad or add the cucumber slices to a green salad. The cucumber slices are crisp when first made and leftover salad stores well for a couple of days in the fridge – the cucumber slices then soak up the dressing and soften and are so good and a perfect quick snack!

Cucumber is low in calories and contain many vitamins and minerals – VitC, manganese, VitK, magnesium and potassium.  Cucumber is an antioxidant and with its high water content (and fiber content in the skin, which you peel off for this recipe – but don’t throw out the peel, nibble on it as a snack!) cukes support gut health and digestion.

Prep Time: 5 minutes / Cook Time: No cook time / Serves 4 as a side salad

Ingredients

  • 1 Regular Field or Italian Cucumber – washed, peeled, cut in half and seeded

  • 1 Tablespoon White Vinegar

  • 1 Tablespoon Sesame Oil – Alternate: Grape Seed or Avocado Oil

  • 1 Tablespoon Tamari – Alternate: Soy Sauce

  • 1 Teaspoon Coconut Sugar – Alternate: Brown Sugar

  • ½ teaspoon Ground Ginger

  • Grinds of Fresh Black Pepper

  • 2 Green Onions or 2 Radishes – Optional yet delicious to include for a hint of flavour, colour and garnish

  • 1 teaspoon Sesame Seeds – For Garnish

How It’s Made

  • Add all the dressing ingredients to a medium sized bowl and whisk or stir with a fork.

  • Peel the cucumber – either a regular field or Italian cucumber - do not use an English cucumber as they do not work as well.  

  • Cut the cucumber in half length-wise and with a spoon, scoop out the seeds.

  • Cut into ¼” slices – you want them a little on the thick side.

  • Add the cucumber to the dressing and stir to coat the slices.

  • If using green onion or radishes, add slices of one or the other and stir to mix them in.

  • Sprinkle with sesame seeds if including.
