Date Caramel Spread

Date Caramel is a delicious and healthy alternative to only nut butter on your toast!  Dates mixed with almond butter creates a smooth caramel that is heavenly on toast, serve with sliced apples or pears to dip into, as a unique layer in squares, a dollop on ice cream or a spoonful in the afternoon as a quick pick-me-up!

Dates are an anti-inflammatory, antioxidant and antifungal fruit, a source of protein, fiber and they contain no fat. They do contain natural sugar and hence why they are a wonderful sweetener. They contain B vitamins, vitamin K, iron, potassium, zinc, calcium, magnesium and manganese.

Almond Butter has many of the same nutritional benefits as almonds – made from ground roasted almond - and is a healthy fat, is rich in vitamins, minerals and antioxidants, especially Vitamin E and potassium to support heart health and a healthy immune system, calcium, magnesium, omega-3 fatty acids to support brain health.

Prep Time: 10 minutes / Cook Time: No cook time / Makes: ~ 1 Cup    

Ingredients

  • 1 Cup Pitted Dates

  • 1/3 Cup Almond Butter – alternates: Sunbutter or another nut butter of your choice

  • 4 Tablespoons Milk of Choice – I use a non-dairy milk

  • 1 Tablespoon Maple Syrup

  • 1 teaspoon Pure Vanilla Extract

  • ½ teaspoon Ground Cinnamon

  • Pinch of Sea Salt

How It’s Made

  • Soak the dates in hot water for 30 minutes or, as I do, microwave water-covered dates in a microwave-safe bowl or pyrex measuring cup, for 90 seconds to soften. Drain.

  • Add all the ingredients to your food processor and whirl until smooth.

  • If you want the consistency of the caramel to be thinner and runny, add 2 extra tablespoons of milk. With the 4 tablespoons as called for in the recipe ingredients, it is a spreadable consistency, as in the photo below.

  • Store the Date Carmel in a container in the fridge. It will last for a few weeks.
