Almond Butter Squares

Super easy to make with just a few ingredients, these Almond Butter Squares are a healthier version of a peanut butter cup. I also make this recipe with all-natural peanut butter for that ‘original’ wonderfully nostalgic delicious taste.
I find the almond butter elevates the squares to something different, unique, and so delectable, dare I say elegant and gourmet! Best of all, whether you make them with almond or peanut butter, they are no-bake so you aren’t heating your kitchen up, especially during the hot summer weather.
Almond Butter and almond flour are made from ground roasted almonds and are rich in vitamins, minerals and antioxidants, supporting the immune system, heart health, bone health, brain and eye health, good cholesterol balance and kidney health. A lot of great nutrition comes from almonds!
Prep Time: 10 minutes / Cool Time: 2-3 hours / Makes: 12-14 Squares, depending on how you slice
Ingredients
Base Later
1 Cup All-Natural Smooth Almond Butter
¾ Cup Almond Flour + additional 2 Tablespoons if needed
2 teaspoons Flax Meal - optional
2 Tablespoons Maple Syrup
1 teaspoon Vanilla
1/8 teaspoon Fine Sea Salt
Topping
1 1/3 Cup Chocolate Chips – or 2/3 cups each dark and semi-sweet chips
1½ Tablespoons Almond Butter
1 teaspoon Coconut Oil
Pinch of Course Sea Salt
How It’s Made
Line a 9 x 5 loaf pan with parchment paper.
Base: Mix all the base ingredients together until well blended. Add the additional almond flour if the mixture is too moist.
Spread the mixture evenly into the parchment paper lined loaf pan.
Topping: In a microwave safe bowl, or over low heat in a small saucepan on the stove top, melt the chocolate chips, the almond butter and the coconut oil together. Stir until smooth.
Pour this mixture over the base for a thick chocolate topping layer.
Sprinkle the pinch of course grain sea salt over the chocolate.
Place in the fridge to set for 2-3 hours or longer.
When ready to cut into squares, remove from the fridge and let it sit at room temperature for 10 minutes or so which will make the chocolate layer easier to cut without cracking. I like to cut them down the middle length and then cut into squares.
Store the cut squares in the fridge. Indulge in a square when you have a craving some something sweet and delicious.
