Sweet Potato Chocolate Pudding
This Sweet Potato Chocolate Pudding is a vegan delight! Even if you aren’t vegan, it is a delicious dessert to make for family and friends or to treat yourself! A few simple ingredients , only a few minutes and you have a healthy, nutritious, fabulous dessert to surprise and delight with! Serve it on its own or with some whipped coconut cream, dairy whipped cream, berries, chocolate shavings, a cookie or fancy wafer, a chocolate heart or a decadent Lindor chocolate truffle… Yum!
Sweet Potato has many nutritional benefits. An excellent source of the antioxidant beta carotene, it converts into an active form of VitA in our bodies which supports eye health. Sweet potatoes are a rich source of fiber to aid in digestion, contain VitC to support immune health, and contain choline to support the nervous system. Sweet potatoes are a good source of plant-based calcium and contain a range of B vitamins.
Cocoa – a powerful anti-inflammatory and antioxidants, rich in magnesium which relaxes the smooth muscles of the body- including the heart and the intestines. Smooth muscles are passive muscles that you can’t work out like you can other muscles, like a bicep for example. Cocoa can help with constipation due to stress and anxiety. Cocoa (and cacao) both contain anandamide and theobromine which are potent neuro benefiting components and help with an overall sense of well-being and calmness, joy, bliss and enhances euphoria – the same feelings we get when we are in love!

Prep Time: 5 Minutes / Cook Time: 15 minutes / Chill Time: 1-2 hours / Servings: 3-4 depending on your serving dish
Ingredients
1 Medium Sized Sweet Potato – peeled and diced into cubes
½ Cup Cocoa Powder - sifted
¼ Cup Coconut Milk
5 Tablespoons Maple Syrup
1½ teaspoon Vanilla
½ Teaspoon Ground Cinnamon
How It's Made
In a medium sized pot, put the cubed sweet potato and cover with cold water.
Bring to a boil over medium heat and allow to boil gentle until the sweet potato can easily be poked through with a fork or sharp knife. This should take about 15-minutes
Drain well and when cool, add the cooked sweet potato with all the other ingredients to your food processor and blend until smooth. You may need to scape down the sides to make sure all the ingredients are mixed together well.
Spoon into pretty serving dishes. Place in the fridge to cool completely. Serve with love!
