Strawberry Bliss Bites
When the weather is hot, I love a no-bake treat recipe. These Strawberry Bliss Bites are stored in the fridge and make a cool treat when you need a bite of something healthy and a little sweet for that bite of yummy quick energy you crave.
They are easy and quick to make, a one-bowl-wonder – no food processor needed for these, and you can eat them soft right away or let them firm up a bit in the fridge.
There is a lot of healthy snack nutrition in these Bliss Bites:
Oats are a nutrient dense, gluten free whole grain, high in fiber and higher amounts of protein than other grains and oats are a rich source of manganese and phosphorous and thiamin (VitB1).
Strawberries – dried – are low in calories, contain fiber, potassium, calcium and iron. Fresh strawberries contain VitC and folate. They are an anti-inflammatory fruit and an antioxidant and are good for vascular function thereby supporting heart health.
All-natural peanut butter is a good source of Vit E, B3 and B6, manganese, magnesium and copper which is particularly good to support immune health. The fat in peanut butter is oleic acid which supports and maintains cholesterol, blood sugar and blood pressure levels, so it is heart healthy. It also supports brain health as it works to on nerve repair, myelin production and inflammation reduction.
Cinnamon and ginger are powerful antioxidants, anti-inflammatory, antibacterial and antifungal. Cinnamon can reduce bad cholesterol (LCL) and triglycerides, balances blood sugar and research is being done to show that both cinnamon and ginger support brain health and reduces cognition decline.
As always, when you make this recipe, I would love to see your creation so please post a photo of your Strawberry Bliss Bites goodness and tag my IG account #RenataCollective or leave a comment with your thoughts!
Prep Time: 5 minutes / No cook or bake time / Makes: 12-14 Bliss Bites
Ingredients
1 Cup Quick Oats
1/3 Cup Large Flake Oats
1 Tablespoon Chia Seed
½ Cup and 2 Tablespoons All-Natural Peanut Butter – alternate: another nut butter of your choice
2 Tablespoons Maple Syrup
1 teaspoon Ground Cinnamon
½ teaspoon Ground Ginger
Pinch of Fine Sea Salt - optional
1 teaspoon Vanilla - not in photo – oops
½ Cup Dried Strawberries – chopped (I use freeze-dried as those are the dried variety we have here.) Alternate: dried blueberries, raisins, craisins, or small diced dried apricots, figs or apple.
1 - 2 Tablespoons Oat Milk – if the mixture is too dry to roll into balls - each batch is different it seem.
How It’s Made
Mix all the ingredients together, except the oat milk. If your mixture is too dry - to roll into balls (as each batch is different - a few oats more or less can make a difference to the consistency of the mixture), add a tablespoon at a time of the oat milk and mix after each addition of oat milk.
Take a tablespoon of the mixture and, with clean hands, roll it into a ball. Continue until you have rolled all the mixture into balls.
Store your delicious Strawberry Bliss Bites in the fridge.
Enjoy!
