Simple 5+1 Ingredient PB Oatmeal Bliss Bites

It’s time again for another Bliss Bite recipe!  5 pantry ingredients are all you need to make this simple, healthy, delicious and satisfying treat: oatmeal, peanut butter, cinnamon, maple syrup and vanilla. If you want to drizzle with chocolate, then that’s a 6th ingredient!

 These are great to make and have on hand for a quick energy snack when that mid-morning or afternoon energy slump kicks in and those tummy grumblies happen. One, maybe two, are all you need to feel satisfied and ready to tackle your next task!

All-natural peanut butter is a good source of Vit E, B3 and B6, manganese, magnesium and copper which is particularly good to support immune health. The fat in peanut butter is oleic acid which supports and maintains cholesterol, blood sugar and blood pressure levels. Look for natural peanut butter where the ingredients are peanuts and perhaps salt. That’s it. The not all-natural peanut butters add sugar, trans fats and preservatives which reduce the nutritional value. Peanut butter is high in calories so eat it in moderation – these balls proportion it wisely.

Cinnamon (Ceylon Cinnamon is the best one) is a powerful antioxidant, an anti-inflammatory, an antibacterial and an anti fungal. It can reduce bad cholesterol (LCL) and triglycerides, balances blood sugar and research is being done to show that cinnamon supports brain health and reduces cognition decline.

This recipe calls for quick oats.  If all you have are old fashioned oats, give them a whirl in the food processor before the other ingredients, to break them down.

Prep Time:  5 minutes / Cook time:  No cook time / Makes: 15 - 18 Bliss Bites

Ingredients

  • 2½ Cups Quick Cooking Oats

  • ¾ Cup All-Natural Smooth Peanut Butter – make sure it’s soft and almost runny

  • 1 Tablespoon Cinnamon   

  • 2 Tablespoons Maple Syrup

  • 1 teaspoon Vanilla

  • 1/3 Cup Chocolate Chips – to melt for a drizzle if you wish to embellish your Bliss Bites.  

How It’s Made

  • Add all the ingredients, and if you feel like some chocolate in the Bliss Bite, add some chocolate chips too - keeping some for the drizzle if you are going to embellish your Bites at the end - to your food processor and whirl until it is all mixed together and it starts to stick together. Test it by pinching some of the dough. If it sticks together well then you are done.  If it is crumbly, you’ll need to add a tablespoon more of peanut butter or maple syrup.

  • If you don’t have a food processor, you can mix it all by hand until it sticks together.

  • Carefully remove the blades from the food processor and taking about a tablespoon of dough, squeeze it in your palm to start the ball then mold it into a ball. Place it on a plate or a parchment lined cookie sheet. Continue making the balls until you all the dough is used up.

  • They are ready to eat right away but if you want to drizzle them with chocolate (PB and chocolate – mmmmmm!), melt the chocolate chips either in a glass dish in the microwave in 30 second increments, or slowly in a small saucepan over low heat, stirring until it is melted. Let the chocolate cool for a couple of minutes, then pour the melted chocolate into a small baggie. Seal the baggie and squeeze the chocolate to one corner. Snip a very small opening of the corner and immediately drizzle the melted chocolate over the Bliss Bites. Let cool. Serve!
