Raspberry Mango Lime Sorbet

As seen in my article on @YorkRegion and my Metroland / Torstar Column - Renata's Table: This frozen fruit sorbet will help you keep cool on those hot summer days

Hello Summer!

Here is a simple 4 ingredient recipe for the most refreshing, delicious and healthy sorbet crafted to cool you down on the hottest day. It’s perfect for a light dessert and certain to impress and delight friends and family. Made with frozen fruit and a lime, this sorbet is made quickly in your food processor and is ready to eat right away with a soft-serve consistency. You can also freeze it to have it more scoopable for a cone or cup.

Raspberries and mangos are rich in incredible nutrition, loaded with protective antioxidants, are anti-inflammatory, support heart and eye health and are a rich source of many beneficial vitamins and minerals.

Lime is another rich antioxidant and anti-inflammatory and the high levels of Vitamin C protects from infection, helps the body heal and the acidity in citrus fruits supports the prevention of kidney stones.

Try other frozen fruit combinations and lemon instead of lime. You can also half the amounts!

This sorbet recipe is a favourite in our home!

Prep Time: 10 Minutes /  Makes: 3+ Cups

Ingredients

  • 2 Cups Frozen Raspberries

  • 2 Cups Frozen Mango Chunks

  • 1 Medium/Large Lime – juiced (2 Tablespoons) and zested (1 Tablespoon)

  • 1 Tablespoon Maple Syrup or Honey – optional, depending on how tart your berries are

How It’s Made

  • Put all the ingredients into your food processor, or blender if you don’t have a food processor,  and let it whirl. If it is too thick, add warm water, 1 tablespoon at a time, until the mixture swirls around easily.

  • Serve right away as a soft-serve consistency dessert or put it into a freezer container and freeze for 3 hours or until it is the more solid consistency you wish.

  • If frozen solid, take it out of the freezer 10 minutes before serving to soften it slightly making serving easier.

  • This delicious, refreshing sorbet keeps in the freezer for a couple of weeks.

Enjoy!
