Pumpkin Spice Latte

I am so happy to share this recipe with you and my newspaper column readers!  I have made this for many years and always freehand it, so measured and documented it for you! I love a pumpkin spice latte year-round but especially in the Fall. With the arrival or Fall and the cooler weather, our family’s food and beverage taste preferences switch to more cozy and spiced. Start your day, or treat yourself on a cool crisp afternoon, by making this healthy and delicious Pumpkin Spice Latte. It’s easy to make and rivals those fancy, expensive, high-calorie coffee shop versions. My version has fewer calories, no sugar-spiking syrups and only a bint of coffee (or you can leave it out altogether).  It is a creamy, warming and fabulous Fall beverage.    

Oat Milk is a great alternative plant-based milk when wanting to reduce your dairy intake. High in beta glucan, a soluble fiber, it supports both the balancing of cholesterol levels and heart health. 

Pumpkin Puree is loaded with beta carotene that converts to Vitamin A that supports eye health. Pumpkin also contains calcium, iron and fiber. 

 Prep Time: 5 Minutes / Makes: 1 generous mug of deliciousness

Ingredients

  • 1 Cup Oat Milk - alternate: almond, cashew, soy or dairy milk

  • ½ Cup Water – alternate: leftover mild herbal tea is fabulous and ups the nutrition in this wonderful beverage

  • 3 Tablespoons Pure Pumpkin Puree (yes, this usually comes in a larger can and you only need a little for this latte but you'll be making this again and again so it will get used up - believe me - plus there are other pumpkin recipes at my site you can use it in!)

  • 1 Tablespoon Coconut Butter – (see photo for the brand I use) alternate: use 1 teaspoon of a nut butter of your choice 

  • 1 Tablespoon Maple Syrup

  • ½ teaspoon Vanilla

  • ½ teaspoon Ground Cinnamon

  • ¼ teaspoon Ground Ginger

  • ¼ teaspoon Ground Cloves

  • 1 teaspoon Instant Coffee Powder (optional but it lends a very interesting subtle flavour)

How It’s Made

  • Add all the ingredients to a small pot on the stove, whisk or stir, and warm up over medium-low heat.

  • Alternately, in a 2-cup (or larger) glass measuring cup, or a medium-sized microwave-safe bowl, add all the ingredients, whisk or stir, and microwave for 2 minutes.

  • Once heated, give the mixture a good whisk.

  • Carefully pour your latte deliciousness into your favourite mug! Top with a dollop of coconut (or dairy) whipped cream.
