Muffin In A Mug

A single serve muffin in a mug – ready in under 5 minutes!

I love making overnight oats, but when I haven’t made them the night before, or if I want a warmer breakfast and a treat at the same time, I make this breakfast muffin in a mug! Make one for each person as no one will want to share!

Of course, this starts with oats – oat flour actually.  I really wonder where I would be without oats in my life!

Oats are a nutrient dense, gluten free whole grain, high in fiber and higher amounts of protein than other grains and oats are a rich source of manganese (essential for metabolism, supports bone health and provides immune support), phosphorous (supports healthy cells and boosts energy levels) and vitamin B1 – thiamin (helps the body convert carbohydrates to glucose which creates energy fuel for your body and efficiently metabolizes fats and proteins).

Prep Time: 2 Minutes /  Microwave Time:  90 seconds  /  Makes: 1 coffee mug sized muffin

Ingredients

  • 4 Tablespoons Oat Flour

  • 2 teaspoons Coconut Sugar -alternate: honey or maple syrup

  • ½ teaspoon Hemp Hearts

  • ½ teaspoon Flax Meal/Ground Flax

  • ¼ teaspoon Baking Powder

  • 1/8 teaspoon Ground Cinnamon – optional but delicious and so healthful

  • Small Pinch of Sea Salt – optional but brings out the flavours

  • 3 Tablespoons Oat Milk – alternate: other dairy free or dairy milk of your choice

  • ½ teaspoon Vanilla

  • 1 Heaping Tablespoon Blueberries – alternate: other berries, nuts, coconut, seeds

How It’s Made

  • In the mug you will use, add the oat flour, coconut sugar, hemp hearts, flax meal, baking powder, cinnamon and small pinch of salt (if including both these). Stir to mix together.

  • Add the oat milk and vanilla. Stir the mixture until smooth.

  • Gently stir in the blueberries.

  • Microwave for 90 seconds.

  • Remove from the microwave and let sit for 15 seconds or so.

  • Eat from the mug or loosen the sides with a spoon and turn mug upside down to release this deliciousness to a plate or bowl. Eat as is, or top with a small pat of coconut butter, almond, peanut or sunflower seed butter, with a dollop of yogurt and a splash of maple syrup or all of these!

  • Quick, easy, filled with healthy nutrition and delish!!
