Saskatoon Berry Pancakes

When a wonderful neighbour asks if you would like to pick some Saskatoon Berries from their loaded, sun kissed berry bush, you say YES! And then you make chia jam, fresh berry pancakes for breakfast and freeze the rest to use in a future delight!

Saskatoon Berries are a superfood, packed with antioxidants and high in plant-based fiber, they look like blueberries and have a similar taste but they are not related.  Saskatoon berries are more in the apple family – interesting! They have 7x the amount of calcium and twice the amount of calcium manganese of blueberries. They are SO delicious!

Saskatoon Berries contain vitamin A, vitamin B6 and B12, vitamin C, vitamin E, thiamine, riboflavin, niacin, pantothenic acid, folate, and biotin. They're also a great source of minerals. They contain phosphorus, potassium, magnesium, iron, sodium, manganese, zinc, molybdenum, and copper. WebMD

Prep Time: 10 Minutes /  Cook Time: 5-6 Minutes per pan / Serves: 4 / Makes `12 4” pancakes

Ingredients

  • 1 cup quick cooking oats

  • 1 cup flour (wheat or gluten free)

  • 3 Tablespoons Coconut Sugar

  • 2 teaspoons Baking Powder

  • 1 teaspoon Baking Soda

  • 1 teaspoon Cinnamon

  • 1½ Cups Oat Milk (or milk of your choice)

  • 1 teaspoon Vanilla

  • 2 Eggs

  • 2 Tablespoons Coconut Oil

  • 1½  Cup Fresh Berries (chocolate chip pancakes are delish too if you don’t have berries!)

 How iit’s Made

  • Preheat your griddle or frying pan over medium-high heat.

  • Spoon 1/4 cup portions of batter into the hot griddle/pan.  The batter will spread out and flatten a but. 

  • Cook until the pancake has set on the sides and small bubbles appear – it will still be uncooked on top.

  • Flip the pancakes and cook 2-3 minutes longer until nicely browned on both sides.

  • Remove to a plate and keep warm.

  • Serve warm with a pat of extra butter and maple syrup!
