Microwave Poached Egg

Do you like poached eggs? We sure do!  It’s a quick and nutritious breakfast and it can be part of a fancy presentation dish or simply on its own. Whichever way you serve it, the poached egg takes center stage.

A microwave poached egg has been making the rounds on IG and so of course I had to try it! It worked great!  And literally it takes 2 minutes tops!

Eggs are a fantastic food. In fact, eggs are in the Superfood category. They are wonderfully nutritious – they are a rich source of a complete protein and contain vit A, B5, B2, B6, B12, D, E and K, phosphorous, calcium, zinc, folate, selenium and many trace minerals beneficial for our health. Look for Omega 3 enriched eggs when buying eggs – free range are wonderful if you can find them.

Eggs contain cholesterol and have been given a bad nutritional rap because of this. The cholesterol in eggs does not increase the cholesterol in the majority of people. The way it works is that your liver makes cholesterol throughout the day. When you eat a food that has cholesterol, your liver simply reduces the amount it produces. In fact, eating eggs is a good way to increase HDL, the ‘good’ cholesterol and having a higher level of HDL supports lowering the risk of stroke and heart disease.  

The vinegar added to the water helps the egg whites congeal quicker so they don’t disperse in the water.

Prep Time: 15 seconds / Cook Time: 90 seconds / Makes: 1 poached egg

 Ingredients

  • 1 cup cool water

  • 1 teaspoon white vinegar

  • 1 egg

How It’s Made

  • Fill a microwavable bowl or measuring cup with the water.

  • Add the vinegar.

  • Crack the egg into the water.

  • Microwave on high for 1 minute and check. Your microwave might have the egg poached already.  Mine took 90 seconds for a runny yolk and 2 minutes for a firm yolk.

  • With a spoon, scoop the egg out of the water and place the egg goodness on a piece of whole grain toast or a hash brown or just eat it on its own simply seasoned with a pinch of salt and a grind of fresh pepper.  Or be really fancy and make an eggs benny!
