Cucumber Watermelon Lemonade
Hot weather calls for lots of hydration and while plain water is wonderful, let’s make it delicious and nutritious too! This Cucumber Watermelon Lemonade is perfect. So simple to make and so refreshing, I keep a jug of this in the fridge all summer long.
Watermelon is naturally delicious tasting and is a nutritious food containing the highest amount of the antioxidant lycopene than any other fruit of vegetable, supporting the decreased risk of cancer, heart disease and age-related eye disorders. Watermelon is a rich source of Vitamin A, C B6 and potassium – supporting skin and eye health, immune support and blood pressure support.
Cucumber is low in calories and high in fiber an many vitamins and minerals – Vitamins C and K, manganese, magnesium and potassium. Cucumber is an antioxidant and with its high water and fiber (in the skin) content supports gut health and digestion.
Lemons are a good source of Vitamin C which protects your heart from disease and stroke, support kidney health as it increases pH making a less hospitable environment for the formation of kidney stones and the citric acid in lemons helps absorb iron better in the body.
Blend this up, add some crushed or cubed ice to a pretty glass, fill it up with this deliciousness and sip away! Some slices of mini cucumber or fresh or frozen raspberries or mixed berries added to the glass make it so pretty and festive! For those who wish - a splash of vodka or gin makes this a wonderful cocktail.

Prep Time: 10 Minutes / Makes: ~10 Cups
Ingredients
4 Cups Water - divided
1/3 Cup Maple Syrup - add more if you wish your drink sweeter
1 1/2 Cups Cucumber - 4 Mini Cucumbers or Half a Medium English Cucumber
3 Cups Watermelon Cubes
2 Lemons - peeled and seeded OR 1 Lemon Peeled and Seeded and 4 Tablespoons Fresh Lemon Juice - add more lemon juice if you want it more lemony.
Frozen Raspberries or Mixed Berries - optional when serving
How It’s Made
Add 2 cups of the water to a high speed blender.
Peel the cucumber if you wish a lighter colour. Leaving the peel provides great nutrition and results in a light green colour as in the photo.
Add the rest of the ingredients.
Blend until completely mixed together.
My blender holds 8 cups so I pour the mixture into a pitcher and add the remaining 2 cups water and I give it a stir.
Store in the fridge.
When serving, add crushed or cubed ice to a pretty glass, pour in the lemonade, add a slice or two of mini cucumber or a few frozen berries and add a straw!
