Chocolate Peanut Butter Cookies

Is there such a thing as a healthy cookie? Yup, there sure is! This recipe makes yummy, crunchy on the outside, chewy on the inside cookies that are ready to eat in 15 mins.

These cookies are dairy-free, gluten-free, egg-free and refined sugar-free, sweetened with a small amount of maple syrup.

Prep Time: 5 minutes Bake Time: 10 Minutes Total: 15 Minutes Serves: Makes 8-10 Cookies

INGREDIENTS

  • ½ cup all-natural Smooth Peanut Butter

  • ¼ cup Maple Syrup

  • 1 teaspoon Vanilla

  • ½ cup Almond Flour (Ground Almonds)

  • 2 tablespoons cocoa powder

  • ¼ teaspoon fine Sea Salt

HOW IT’S MADE

  • Preheat your oven to 350°F.

  • Line a cookie sheet with parchment paper or a silicon sheet.

  • Mix the peanut butter with the maple syrup until smooth.

  • Add the almond flour, cocoa, vanilla and sea salt. Mix well.

  • Roll a scant tablespoon of the dough into a ball and place it onto the prepared cookie sheet.

  • Flatten the cookie balls with a fork, making hash marks as in traditional peanut butter cookies.

  • Bake for 10 minutes and remove from the oven. The cookies will be very soft right out of the oven so let them cool completely before removing them from the cookie sheet.

  • Store cookies in an airtight container on the counter (these do not need to be stored in the fridge)
