Oven Baked Garlic and Olive Oil Cabbage Rounds
Cabbage is, in my opinion, an underrated and under-utilized vegetable. It is so much more than coleslaw! Cabbage is full of healthy nutrients and is very versatile in soups, stews, in fillings for burritos, enchiladas or tacos. Cabbage becomes soft and almost sweet when cooked.

This recipe makes a delicious side dish right out of the oven, or cooled added to salads, added to a stir fry or eaten as a snack!
Prep time: 5 Minutes / Cook Time: 40 Minutes / Number of Servings: 4-6 depending on how many slices you make.
Ingredients:
1 small head of Green Cabbage
1/3 cup Olive Oil
6 cloves Garlic – minced /mashed
Pepper and Seasoned Salt – to taste
Garlic Powder (not garlic salt!) – to taste (optional)
How It’s Made:
Preheat your oven to 375 degrees F.
Prepare your baking pan by pouring a tablespoon of the olive oil on the pan and using a basting brush, ensure the pan is covered with the oil. Season the pan with a few grindings of pepper and a dash of the seasoned salt. Sprinkle with garlic powder if using.
Remove the outer leaves from the head of cabbage. Rince the head under cold water, then trim the stem to the bottom of the cabbage and cut the cabbage into ½ inch slices.
Place the cabbage slices on the pan and baste each with olive oil. Sprinkle half of the minced/mashed garlic on each round. Add pepper and seasoned salt to taste.
Bake the cabbage rounds for 25 minutes. Remove from the oven and carefully flip each round over. If some of the outer leaves fall apart, that’s ok, they’ll still taste great.
Repeat the olive oil basting, sprinkling the remaining minced/mashed garlic and a grind of pepper on this side of each slice (I don’t add salt on this side).
Return the pan to the oven and bake for another 15 minutes. The cabbage rounds should be lightly browned. If they aren’t quite there yet, let them bake longer and check ever 5 minutes until they are browned as you like.
Remove from the oven.
Serve immediately, or let cool and store in the fridge for 2-3 days.
