Super Simple Lunch Salad
Doesn’t this salad look good?! It tastes so delicious and satisfies even more! With some simple effort in your food prep, everything you need will be waiting in your fridge to put this lunch together in a few minutes.
This salad and every meal should have this combination, has a balance of protein (egg white and hummus), healthy fat (avocado and egg yolk and salad dressing) and carbs (gluten-free cauliflower crackers – see below).
Of course, it’s a salad so you can mix up the greens and the veggies any which way you like – romaine, arugula, spring mix… sliced carrots, celery, diced raw zucchini, sliced peppers, sliced mushrooms… use what you have on hand! It just feels so good to eat good whole foods knowing how they benefit our health!
Ingredients for making two plates of this salad:
1 Cup Baby Spinach
1 Tomato – I like a ripe Roma variety
1 Large Avocado – or two small ones
2 Heaping Tablespoons Hummus
¼ Cup Homemade Tamari Tahini Sesame Oil Dressing
Fresh Grind of Pepper – to taste
1/3 Cup Crackers
How It’s Made
It comes together quickly if you have the salad dressing, the hummus and the hardboiled eggs already made up in your fridge. The links to my hummus and foolproof way to hard boil eggs are linked in the ingredients list above.
The dressing is a quick Tamari Tahini Sesame Oil dressing - so good! Link above as well!
Build your salad by plating the spinach first, top with cut up tomatoes, drizzle with a bit of dressing, top with avocado, a bit more dressing, dollop the hummus on the side, slice the egg (does anyone else have the vintage slicer gizmo from their parents’ kitchen like in the photo – so handy!), add some crackers, a quick grinding of pepper and you’re done!
I found these gluten-free cauliflower crackers at Costco and they are fabulous! Look at those ingredients! I highly recommend them!
