Cottage Cheese Banana Bake
Cottage cheese is having a long moment due to its protein richness and I am a fan! This is a great protein bowl to start your day or enjoy for a snack or even a dessert! Combined with the oats and eggs in this recipe make this a protein and fibre rich delight! There is no added sweetener other than the banana and berries – they are all you need. Yet you can always add a splash of maple syrup or honey when serving! Warm from the oven or cool from the fridge – both are great.
This is a great meal prep recipe as you can blend it up the night before and bake in the morning.
Cottage cheese is a mild flavoured fresh soft, white cheese with a mild flavor offered widely at retail with different milk fat levels. Cottage cheese is a rich source of protein, is low in calories, with many nutrients, such as calcium, various B Vitamins, phosphorus and selenium.
Bananas are an antioxidant and a rich source of fiber, VitB6, VitC and potassium. Bananas are relatively low on the glycemic index based on their ripeness – the sugar content increase as the banana ripens as the starch in the banana turns to natural glucose, fructose and sucrose. The antioxidant flavonoid catechin contained in bananas is beneficial for heart health.
Oats are a nutrient dense, gluten free whole grain, high in fiber and higher amounts of protein than other grains and oats are a rich source of manganese, phosphorus and thiamin (vitamin B1), for heart and bone health and metabolism and immune support.
Eggs are in the Superfood category. They are wonderfully nutritious – they contain vitamins A, B5, B2, B6, B12, D, E and K, Phosphorous, Calcium, Zinc, Folate, Selenium and many trace minerals beneficial for our health.

Ingredients
3/4 Cup Cottage Cheese
2 Eggs
1/3 Cup Quick Oats
1 Medium Banana
1½ teaspoon Hemp Hearts
1½ teaspoon Flax Meal
½ teaspoon Ground Cinnamon
½ Cup Fresh or Frozen Berries (I used ¼ cup each frozen wild blueberries and raspberries)
How It’s Made:
Preheat your oven to 375°F.
Grease a medium-sized oven-safe baking dish. The round one I use is 5½” across. You can also make this in 2 individual 3½” ramekins.
Add all ingredients, except the berries, to a blender (bullet type or regular blender) or a food processor, and blend until smooth.
Pour the mixture into the prepared dish and sprinkle the berries on top.
Pop into the preheated oven and bake for 30 minutes. Check to make sure the middle is set. If not, bake longer in 5-minute increments and check again.
Remove from the oven and let cool for a few minutes.
If you used one dish, spoon into pretty bowls or if you made the individual remekins, serve with love!
