Caesar Baked Chicken

One of the easiest chicken recipes from The Renata Collective, this Caesar Baked Chicken dish is made with 3 main ingredients and takes 5 minutes to put together. Super simple and super delicious! The creamy Caesar dressing makes the chicken very tender and very flavourful.

I make my own Creamy Caesar Salad dressing, as I like to know the ingredients that go into what I eat. You can use a good quality store-bought Caesar salad dressing for this recipe – look at the ingredients and pick one that has authentic ingredients that you recognize and no preservatives, additives and colours. Regular or vegan Caesar dressing both work.

Chicken thighs or breasts – a great alternative to red meat, chicken is a lean protein and a good source of amino acids to build and maintain muscle tissue and to support bone density. The tryptophan in chicken like in turkey is a mood booster as it helps to increase the serotonin levels in our brain. Chicken contains Vit12, iron, copper, choline and zinc.

Prep Time: 5 minutes / Cook Time: 40 minutes / Servings – 3 to 4

Ingredients

  • 6 Large Boneless Skinless Chicken Thighs or Small Boneless Skinless Chicken Breasts -trimmed of extra fat

  • 1 Cup Creamy Caesar Salad Dressing

  • ½ Cup Parmesan Cheese – grated - use the best quality you can find - or vegan parmesan

Optional

  • Generous Grinds of Fresh Black Pepper

  • A Pinch Herbed Seasoned Sea Salt or Plain Sea Salt

  • 1 Tablespoon Dried Parsley - garnish

How It’s Made

  • Preheat your oven to 375°F. For easy clean up, line an oven safe casserole dish large enough to hold the chicken in a single layer with foil.

  •  Place the chicken in the dish.

  • Dollop the dressing over each piece, careful not to touch the raw chicken with the spoon, and then spread the dressing to cover each chicken piece.

  • The dressing is already so flavourful that you don’t really need any seasoning but if you do wish to season, a few grinds of fresh black pepper is fine and if you add salt, do so sparingly – a pinch is all you would need.

  • Bake for 40 minutes and test the chicken for doneness by inserting a meat thermometer into the fattest piece – it must read 165°F.  No meat thermometer? Cut into the largest piece to ensure that it is no longer pink in the middle.  If the chicken isn’t done yet, return the dish to the oven and check in 5-minute intervals until the chicken is cooked.

  • When the chicken is cooked, sprinkle the grated parmesan evenly over each piece of chicken. Return the dish to the oven and cook for 5 minutes longer. Turn the broiler on and broil for 2 or 3 minutes, watching to make it sure it doesn’t burn, to brown the parmesan cheese and sauce on top of the chicken. Garnish with a sprinkle of dried parsley.

  • Remove from the oven and serve! Spoon some of the delicious sauce over the chicken. So good!
