Healthy Energy Bliss Bites
I have been playing around with different ingredients making energy bites, energy balls, snack balls… whatever you call them in your home. There are SO many recipes out there for energy bites, I’m sure my inspiration is an amalgamation from the dozens of recipes I’ve tried over the years! I hope you’ll enjoy it.
Making Bites is so easy – throw everything in a food processor, give it a whirl until it comes together and then roll them into balls. I have a few different Bite recipes to post over the coming weeks, starting with this one, packed with healthy fats, protein and nutrients!
Prep Time: 15 minutes Bake Time: No bake time! Total: 15 Minutes Makes: 12 Bites – or more depending on how big you make them
Ingredients:
½ cup Dates – soaked in hot water or microwaved for 30 seconds to soften
½ cup Oats
2/3 cup natural Peanut Butter
3 Tablespoons Maple Syrup
¼ cup Flax Meal (ground flax seeds)
1 Tablespoon Shredded Coconut
½ teaspoon Cinnamon
1 Tablespoon Chia Seeds
1 Tablespoon Hemp Hearts - optional
1 Tablespoon Pumpkin Seeds – optional
1/8 teaspoon Turmeric – optional
1/3 cup Dark Chocolate Chips - optional
¼ cup additional Dark Chocolate Chips – for the drizzle
How It’s Made:
Put the softened dates in your food processor and whirl them until they are broken up and clumping together.
Add all the other ingredients (except the additional chocolate chips for the drizzle) and whirl until the mixture sticks together and forms a ball – it takes 1- or 2-minutes tops. If the mixture is too dry (depending on your oats, peanut butter…) add another teaspoon of maple syrup or water.
Remove the blades from the food processor.
Wash your hands. Form the balls by spooning a heaping tablespoon amount into your hand, squeeze the mixture to pack it together and roll it into a smooth ball.
You can stop here but I am all about drizzle right now! Melt the dark chocolate chips either in a glass dish in the microwave in 30 second increments, or gently in a small saucepan over medium-low heat, stirring until it is melted. Pour the melted chocolate into a small baggie. Seal the baggie and squeeze the chocolate to one corner. Snip a very small opening of the corner and immediately drizzle the melted chocolate over the Bites. Let the chocolate cool for a minute or so. You can eat these right away or put them in the fridge to harden slightly. Eat!
Store them in the fridge to keep them fresh longer! They don’t last long around my home!

Variations:
Roll the formed bites in crushed peanuts.
Use almond butter instead of peanut butter and top each with sliced almonds.
Add 1 teaspoon Vanilla
Add ¼ teaspoon fine Sea Salt
