Croissant Berry Bake

A perfect brunch recipe for family and friends! This dish can be made the day of or prepped the night before and baked in the morning. The croissants bake in the custard and the berries create a jammy goodness. Serve with a drizzle of maple syrup or honey, extra berries and a dollop of whipped cream or yogurt and you have a fabulous and special breakfast meal to serve your loved ones.
Prep Time: 10 minutes / Soak Time: 1 hour or overnight / Cook Time: 50 minutes/ Servings: 6-8
Ingredients
15 Mini Croissants or 4-5 Regular Sized Croissants (4 cups) – ripped into bite-sized pieces
2 Cups Berries – fresh or frozen and thawed – and extra for serving
5 Eggs
1 Cup Milk – dairy or plant-based
½ Cup 10% Cream – dairy or coconut cream
¼ Cup Butter – melted – dairy or plant-based
2 teaspoons Vanilla
1 teaspoon Frech Lemon Juice
1 teaspoon Fresh Lemon Zest
¼ Cup Cane Sugar or Coconut Sugar
2 teaspoons Ground Cinnamon
½ teaspoon Ground Cloves
1½ Tablespoons Hemp Hearts – optional and deliciously healthy
1 Tablespoon Flax Meal - optional and deliciously healthy
How It’s Made
In a 9x13 baking dish, evenly spread the pieces of croissant to cover the bottom of the dish.
Distribute the berries evenly into the croissants.
Custard: in a large bowl, whisk the eggs, then add the remaining ingredients and whisk together until well blended together.
Pour the custard mixture over the croissant pieces and berries and push down on the croissant pieces with your spatula to make sure they are all covered in the liquid to soak up the custard.
Cover with plastic wrap and place in your fridge for an hour or overnight.
When ready to bake, preheat your oven to 350°F.
Remove the plastic wrap and place the baking dish in the hot oven.
Bake for 50 minutes. It should be set and golden brown. If not done yet, bake in 5-minute increments and check again.
Remove from the oven and let it sit for 5 minutes.
Serve with a drizzle of maple syrup or honey. Some berries on the side and a dollop of whipped cream or yogurt or a splash of cream makes it extra special.
