Chia Egg – Egg Replacement

Most baking recipes include an egg. Eggs play an important part in conventional baked goods. They work as a rising agent, provide structure and firmness, add color and flavor to baked goods. For vegan baking, there is an egg replacement called a Chia Egg. A Chia Egg provides structure and firmness but not the rising, colour or flavour – other ingredients provide these characteristics in vegan baked items.

Chia seeds are gluten-free, are a rich source of Omega 3 fatty acids, have anti-oxidant properties and are a very good source of protein and fiber.

A Chia Egg is very simple to make. All you need are chia seeds and water.

The following makes the equivalent of 1 regular egg.

Ingredients

  • 1 Tbsp chia seeds

  • 2 ½ Tbsp water

How It’s Made:

  • Add the chia seeds to a small bowl.

  • Add the water.

  • Stir to make sure all the chia seeds are covered with water.

  • Let the mixture sit for 5 minutes to thicken. It should become thick and resemble a slightly runny gel.

  • Use in your vegan baking recipe.
