Tahini Peanut Butter Blondies

Blondies made with tahini and nut butter are a baking craze right now! And rightly so as they are a delicious healthy snack filled with good nutrition to satisfy a sweet tooth and to provide a boost of energy.

Tahini is made from roasted ground sesame seeds and has a subtle nutty flavour. Tahini is a healthy fat, a source of protein, it is an antibacterial and antioxidant combating the free radicals in our bodies that can cause inflammation. Tahini is a good source of both manganese and phosphorus - both play vital roles in our bone health and of VitB1 (thiamine) and VitB6, which are important for the body’s energy production. Luckily tahini is available in most grocery stores!

My recipe for Tahini Peanut Butter Blondies is gluten and dairy-free (they do contain an egg), is easy to make and delicious to eat! Prep: 5 minutes / Bake time: 25 minutes / Total time: 30 minutes / Makes: 16 Squares

Ingredients:

  • ½ Cup Tahini

  • ½ Cup Natural Peanut Butter

  • 1 Egg

  • 1/2 Cup Oat Flour (to make oat flour, simply grind oat flakes to a fine consistency in your food processor)

  • 1/4 Cup Coconut Flour

  • 3/4 Cup Coconut Sugar

  • 1/3 Cup Almond Milk

  • 1/3 Cup Chocolate Chips

  • ¼ cup chopped nuts – almonds, walnuts or pecans - optional

How It’s Made:

  • Preheat your oven to 350°F.

  • Line an 8x8 baking pan with parchment – overhanging the edges for ease of lifting the squares out.

  • In a medium bowl, stir together the tahini, peanut butter, egg, oat flour, coconut flour and then add the almond milk to make the batter smooth.

  • Stir in the chocolate chips and chopped nuts (if using).

  • Spread the batter in the prepared pan, evenly smoothing the top.

  • Bake for 25 minutes and remove from the oven. Cool.

  • Cut into 16 squares and eat them plain or, to take them to the next level of deliciousness, drizzle with my Tahini Maple Syrup Caramel or melted chocolate.
