Heart Shaped Quesadillas
Valentine’s Day is around the corner, I’ll be making these heart-shaped quesadillas to have for lunch that day. I love playing around with tortillas – using one folded in half, or one on top of the other as in this recipe, or folded in half and then in half again (watch for a post on this coming up!). Quesadilla contents are fun to change up. Family favourites here are the straight-up salsa, greens and cheese. Or, alfredo sauce with chicken, baby spinach and diced roasted red peppers. Mashed beans and tahini to keep it dairy-free. Even peanut butter and banana or chia jam makes a great quick quesadilla! And you can hide healthy, nutritious veggies in them for those picky eaters.
This is a great recipe for kids to help with or to make on their own – supervised of course – especially if you buy grated cheese! You could even have a quesadilla bar with various options available and let everyone choose their own filling!

Prep: 5 minutes / Bake time: 7-10 minutes / Total time: 15-20 minutes / Servings: 2 love-filled delicious Quesadillas
Ingredients
4 Tortillas – regular, ancient grains (as in the photos), Gluten-Free
½ cup Salsa
½ cup Baby Spinach
½ cup shredded Cheese – Mozzarella is in the photos
½ cup cut-up Chicken – optional
Instructions
Preheat the oven to 350°F and line a cookie sheet with parchment paper.
Stack 2 tortillas and cut them out into heart shapes - fold them over and cut as in the photos.
Build these on the prepared cookie sheet if you wish. On one of the heart-shaped tortillas, spread a little less than half of the salsa on the tortilla.
Top that with half the spinach.
Top that with half the chicken (if using).
Top that with half the cheese.
Spoon some of the salsa on top of the cheese.
Put the other tortilla on top and press down gently to stick the quesadilla together.
Transfer to the cookie sheet.
Bake in the preheated oven for 7-10 minutes, until the cheese is melted.
Remove from the oven and let cook for a couple of minutes.
