Baked Rice Krispie Squares
Who doesn’t love rice krispie squares? Who does enjoy that gooey sticky messy pot to soak and clean up afterwards? I sure don’t. So when I saw this trending BAKED rice krispie recipe, I had to try it, and it didn’t disappoint. It’s a bit of a game-changer for rice krispie squares! The ingredients are mostly the same as the made-in-a-pot-on-the-stovetop recipe, no vanilla in these baked ones, just layered in a pan and baked in the oven to mix together when the marshmallows are melty and gooey.
Homemade squares are healthier than the extra sugar laden commercial boxed ones, and I think they taste much better too. However… these are a true treat as there isn’t a lot of nutritional value in a rice krispie square. The cereal does have iron and some B vitamins as it is fortified in manufacturing. So enjoy these as a treat and make them last.
As always, when you make this recipe, I would love to see your creation so please post a photo of your Baked Rice Krispie Squares goodness and tag my IG account #RenataCollective or leave a comment with your thoughts!
Prep Time: 5 Minutes / Bake Time: 20 Minutes / Makes: 16 squares using an 8”x8” baking pan
Ingredients
1/3 Cup Butter - cut into cubes
9 Jumbo Marshmallows or 16 Regular Marshmallows (not mini marshmellows) - I find the Jumbo sized works best!
3 + 2 Cups Rice Krispies – divided
Add-ins – optional
1/3 Cup Chocolate Chips or Butterscotch Chips or Peanut Butter Chips
¼ Cup Skor Bits
2 Tablespoons All-Natural Peanut Butter
Raisins (not my fav but some people love raisins in rice krispie squares
Anything you like to add!
How It’s Made
Preheat your oven to 350°F
Line an 8”x8” baking dish with parchment paper.
In that lined pan, evenly distribute the butter cubes on the bottom.
Top evenly with the marshmallows.
Sprinkle 3 cups of the rice krispies over the marshmallows letting them fall between the marshmallows.
Bake for 20 minutes if using jumbo sized marshmallows, 15 minutes if using regular sized marshmellows - the marshmallows should be a light golden brown colour and soft. If they aren’t soft and gooey, bake another 3 minutes and check again.
Remove from the oven and immediately, carefully, stir the marshmallows into the rice krispies and melted butter. It might get messy – that’s ok. Any krispies that fall out during the stirring can be put back into the pan. The mixture should be goopy and very marshmallow-y.
Add the remaining 2 cups of rice krispies, one cup at a time, and stir again to mix them in.
Add in any add-ins you wish or leave them plain.
Once the mixture is well mixed, press the mixture down in the pan – using your fingers or a flat-bottomed glass or measuring cup.
Let cool and then cut into squares.
Enjoy!
