Wholesome Fruit and Grain Breakfast Bake

Blueberries are one of my favourite berries! And when it’s blueberry season I use local fresh blueberries in anyway I can! I eat them as a snack by the handful as well, washed and straight into my mouth! No bowl required! This delicious gluten free recipe is loaded with so many healthy ingredients and is a powerful way to fuel your mornings with fantastic nutrition. Put it together quickly, then it bakes in the oven while you do other things and come back to a wholesome breakfast that everyone will love! Trust me - this is so good! 

This recipe calls for quinoa to be rinsed but not cooked. It cooks while baking which make including quinoa so easy!

Blueberries are a superfood, little powerhouses of incredible nutrition, loaded with antioxidants, are anti-inflammatory, do not spike blood sugar, are a rich source of vitamin C, Manganese, vitamin K, contain the mineral folate and are fiber-rich to support gut health.

Quinoa is an antioxidant, anti-inflammatory, gluten-free superfood, and ancient grain, a healthy carb and a complete plant-based protein food containing all 7 amino acids, rich in fiber, magnesium and iron.

Oats are a nutrient dense, gluten free whole grain, high in fiber and protein, a rich source of manganese, phosphorous and thiamin all supporting gut, bone, heart and immune health.

Hemp Hearts are rich in essential fatty acids, are a high-quality plant-based protein source, support immune system, heart health and blood pressure balance, bone health, muscle and nerve function, contain VitB complex, phosphorus, potassium, magnesium, calcium, iron and zinc.

Use any kinds of fruit you like in this recipe, if blueberries and pear are not your favourites. Raspberries, blackberries or Saskatoon berries, apple, peaches… all are delicious to start your day!

Prep Time: 10 minutes / Cook Time: 50-55 minutes / Servings: 6-8 depending on how big you cut slices    

Ingredients

  • I Cup Blueberries 

  • 1 Cup Fresh Pear - diced, no need to peel

  • 2/3 Cup Large Flake Oats

  • 2/3 Cup Quinoa - rinsed, not cooked 

  • 1/3 Cup Almond Flour

  • 2 Tablespoons Hemp Hearts

  • 2/3 Cup Chopped Nuts of your choice - optional - pecans and/or almonds are my favourites

  • 2 Eggs

  • 2 Cups Milk of Choice - I use a plant based milk

  • 1/4 Cup Coconut Sugar

  • 2 Tablespoons Honey - alternate: Maple Syrup

  • 1 Heaping Tablespoon Ground Cinnamon

  • 2 Tablespoons Lemon Zest

  • 1 1/2 teaspoons Vanilla

  • Pinch of Sea Salt

How It’s Made

  • Preheat your oven to 375°F degrees.

  • Add the blueberries, pear, oats, quinoa, almond flour, hemp hearts and nuts (if including) to a baking dish (mine is 11” x 8”) and stir to mix together.

  • In a separate bowl, whisk the eggs, milk, coconut sugar, honey, cinnamon, lemon zest, vanilla and salt until blended.

  • Pour the wet mixture over the ingredients in the baking dish. Stir to mix everything together well so that the dry ingredients are covered in the liquid. 

  • Bake for 50-55 minutes. 

  • Serve warm with a generous dollop of Greek yogurt and a splash of maple syrup. So good!!
