Did you know that asparagus is a perennial flowering plant and it is the new shoots that are harvested as a spring veggie? Not only is asparagus delicious, and elegant to serve, it is low in calories, has diuretic properties and is a good source of fiber so helps with bloating and helps with weight management.

Asparagus is an antioxidant and is rich in VitA, VitC, VitE, VitK, B6, and calcium, iron, copper and folate.

Snap off the tough part at the bottom – it will snap at the natural point where it is tough - gently simmer in lightly salted boiling water until a sharp knife pierces the stalk easily, drain and serve with a grinding of pepper, and your choice of sauce, or plain.

A bit of butter or ghee, hummus, aioli, my Tahini Tamari Sesame Oil Dressing, a Hollandaise or even served with straight up mayo all work deliciously!
