Almond Flour 90 Second Bun

There are almond flour bun recipes going around social media these days so I had to try to create one of my own. This is a great bun! My version of the recipe is good for either a breakfast bun or a savory bun – it all depends on the seasonings you add to the batter. It is made in a couple of minutes, then microwaved for 90 seconds and it’s done. You can eat it right away or let it cool, then toast it. It holds its shape and is a very tasty great base for any type of open faced or closed sandwich filling you like! And it’s keto so no carbs – bonus!   

Almond Flour is a good alternative to wheat flour in certain recipes. Almond flour is an antioxidant, rich in VitE (heart health) and magnesium (blood sugar blood pressure support) and it is naturally gluten free.  Use almond flour and not almond meal as the flour is ground finer and that’s important in baking.

Eggs are a fantastic food. In fact, eggs are in the Superfood category. They are wonderfully nutritious – they contain Vit A, B5, B2, B6, B12, D, E and K, Phosphorous, Calcium, Zinc, Folate, Selenium and many trace minerals beneficial for our health. Look for Omega 3 enriched eggs when buying eggs – free range are wonderful if you can find them.

Prep Time: 3 minutes / Cook Time: 90 seconds in the microwave / Makes: 1 serving of a large bun

Ingredients

  • 1 Tablespoon Butter – I use unsalted

  • 3 Tablespoons Almond Flour

  • 1 Egg

  • 1 teaspoon Hemp Hearts

  • 1 teaspoon Flax Meal (ground flax seeds)

  • ½ teaspoon Sesame Seeds (oops…. not in the ingredients photo!)  

  • ½ teaspoon Baking Powder

  • Pinch of Sea Salt

How It’s Made

  • Melt the 1 tablespoon butter in a microwaveable bowl. See the size I use in the photos. I like the flat bottom of this Corning Bowl (French White is what I believe it’s called. When I see this size at the thrift store, I grab them! They are so handy!} but any microwavable bowl will work fine – if it doesn’t have a flat bottom, no worries, you will have a rounded top to your bun!

  • Add to the melted butter: the 3 tablespoons almond flour, 1 egg, ½ teaspoon baking powder, 1 teaspoon hemp hearts or flax meal (or both), the sesame seeds and a pinch of sea salt. This is for a plain bun. For a savory bun, see the variations below.  

  • Mix together with a fork until smooth.

  • Microwave for 90 seconds. Check for doneness, it should be dry. If it is still a bit wet, microwave longer in 10 second intervals until done.

  • Let cool for a minute or two. Turn the bowl upside down to slide the bun out. Cut in half. Top with the toppings of your choice and devour!

  • Or, remove the bun from the bowl and let the bun cool completely, cut in half, then toast in a toaster oven – I haven’t tried it in a traditional stand toaster.

Variations

  • For a savory bun, add in 1 tablespoon Everything Bagel seasoning i, or ¼ teaspoon garlic powder (make sure it’s powder, not garlic salt), ¼ teaspoon onion powder, 1/8 teaspoon dried basil or oregano, 1/8 teaspoon dried parsley… the options are endless! 

  • Top with sliced spring onions or chives, 1 teaspoon (or more if you like it cheesy) of grated parmesan is delicious!

  • 1 tablespoon of grated cheddar is fabulous too!    

Doesn’t look as good as it tastes - homemade Chia Jam with butter, all natural PB with honey on the other half. So good!
